Yesterday, I ran the 9 pounds of cooked pork through the food processor, then added 13 pounds of Mozzarella cheese. I mixed those with my hands in 3 different bowls then added the sauce.
I put everything out that I needed to make the Pupusas then went to work on the computer.
Later in the afternoon, the boys put everything in the Suburban and I drove to the school. Maria showed up after she took the two little girls to a friend's house where they spent the night and she helped me set up the griddles, and then she started making tortillas balls.
I arrived an hour early for the Cultural Night and had about 30 Pupusas made before the people started coming to eat and see the displays.
They were all gone in about 10 minutes and there was a line the rest of the evening. As soon as we took one off the grill, it seemed as though four more people were in line.
Most people had never had one and I received many compliments. There isn't anything quite like a Pupusa.
The Cultural Night went really well. The students were very creative and had some exciting, fun, and colorful displays. The community supported it and it went smoothly.
It was from 6:00 pm until 7:30 pm and we were there until 8:30 cleaning. We came home and were going to watch a movie but instead we just talked for awhile, read scriptures, and went to bed.
I woke up at 6:00 am to feed Lambie then went back to sleep until 9:30. I had not slept in for sooo long and it was glorious. The older you get the more important sleep becomes.
I spent the day bathing Lambie, doing laundry, paying bills, working on correcting papers for students, and other jobs.
Hopefully, I will be able in a bit to take a nice long hot bath and read. I still need to make an arrangement for church tomorrow. I have daffodils and crocus blooming.
