Guatemalan Guacamole

This link shows a lime squeezer. This is a cheap little tool that is best bought at a Spanish Food store. They are more heavy duty and have bigger holes than the ones at a gringo store.


I looked all over the Internet and no one nows the best way to squeeze lemons or limes. The Spanish ladies taught me how:


Roll the lime or lemon on the counter or cutting board. It will get softer and juicier as you roll it. After it is soft, cut it into quarters or more pieces if it is a big.


Stick a piece into the squeezer. Squeeze the lime piece. throw the scraps in the chicken bucket (that is if you live on a farm like us).


I ate this guacamole at a summer BBQ in Houston. The lady who made it was from Guatemala. I had never had Guacamole like this. YUM! And it is easy!


Ingredients

  • 2 avocados

  • 2 tomatoes

  • 1/2 lime, juiced

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

Directions

  • Cut the avocados into halves. Remove the seeds, and dice the avocados. Do NOT mash the avocado. Dice the tomatoes, too.

  • Stir the lime juice, salt, and pepper together. Pour on top of avocados and tomatoes. Mix all together. Cover the bowl, and refrigerate for 1 hour before serving. (If you can wait that long).

  • Another Spanish secret is to leave the pits in the guacamole. They help to keep the avocado from turning brown.

Variations:

Add 1/4 teaspoon of garlic powder


and/or


1/4 teaspoon of onion powder
