PEANUT BUTTER CHEWS

  • 16 ounce bottle of Corn Syrup / 2 cups

  • 2 cups of sugar

  • 1 18 ounce jar of Peanut Butter / 2 cups

  • 2 t Vanilla

Mix together and bring to a boil. I use a non-stick tall 4 quart pan. let boil 30 seconds. Then add:


9 cups of cornflakes. Mix together. Pour onto wax paper or I use a large 14x 24 greased baking dish. You could do as no-bake cookies and spoon out into individual lumps.(Too much work for me...I just put it into the pan and then let everyone at it!)


This is ADDICTIVE stuff!! You can't stop eating it! And it is a lot better than just eating candy! So when you need a fix...just make this.


Also, you can use any cereal so it is a way to get rid of leftover cereal. We have tried just about every kind, but we do like corn flakes the best.


OH YEAH---this recipe is doubled from the original---but why make so little?!?


(On the Corn Syrup, I buy a larger 32 oz bottle and use 1/2 the bottle or when I can find an even larger bottle...just measure the two cups. Same with the PB...I buy the large cans at Sam's. Also, all my extracts, spices, etc. I either buy at Spanish stores, Frontier Herbs, or through Food Cooperatives...too expensive to buy from regular grocery store.)

Chocolate (Peanut Butter) No-Bake Cookies

  • 2 cups sugar

  • 3 Tb unsweetened cocoa

  • 1 stick butter

  • 1/2 cup milk

  • 1 Tb vanilla

  • 3 cups oatmeal

Variations:

1 cup peanut butter


You can also add 3/4 cup of coconut. Or on special occasions, make little balls with the cooked mixture, then roll them in coconut or chopped nuts.


I have also used leftover cereal in place of the oatmeal, although, I prefer the oatmeal best.

In a heavy saucepan bring to a boil sugar, cocoa, butter and milk. Let the mixture boil for one minute and add peanut butter, vanilla and oatmeal.


Drop by tablespoonfuls onto waxed paper or aluminum foil until cooled and hardened.


These are good with chunky or creamy peanut butter, and I let mine sit in the pan for just about 30 seconds or so, after everything’s mixed so it hardens a bit before I scoop it out.


If it’s too hot it’ll spread out quite a bit and won’t hold much of a shape.


HINT:

Start timing when mixture reaches a full rolling boil. If you boil the mixture too long the cookies will be dry and crumbly. If you do not boil it long enough, the cookies will spread out.
