HOMEMADE ICE CREAM
 
6 large eggs or 8 small eggs
1 large pkg. instant Vanilla pudding
1 1/2 cup sugar
1 pint heavy whipping cream
1 T Mexican Vanilla extract
 
Mix together. I do so in my Vita-Mix blender so it's really well blended. You could also use beaters, etc.
 
Pour mixture into your ice cream maker and add WHOLE milk until it is about 2/3 full.
 
  • Follow the directions for your machine which is basically, put the cover on.
  • Fill the bucket with ice and rock salt, sprinkled here and there.
  • Start the machine and keep adding ice and rock salt until the machine stops.
  • Immediately, pull the blender piece out, clean it up.
  • Put lid back on and freeze for 30-40 minutes until ice cream is harder.
 
I add frozen strawberries, crushed oreos, etc., etc. Whatever you want!! This makes 1 gallon. I have a bigger machine so I simply add more eggs, milk, and 1 more pkg. of pudding to make the difference. This makes great ice cream!
